Maybe I should start off by explaining the title for this particular post. This year for Thanksgiving we kept it pretty low key : unfortunately our family was quite spread out and we couldn't celebrate it all together (was it something we said????) So, since it was just going to be the two of us, we decided to bring back some of our favourite recipes/dishes which we've posted on our blog in the past year and a half. Earl the Turkey (#2) would have been just too much food for the two of us (we would have been eating it for weeks!), so we elected to go with our favourite pork chops, hence Tom the Pig (totally ripped off from an episode of Parks and Recreation that we just watched.) I cannot state enough how much I love these pork chops. Just thinking about them makes my mouth water. Seriously. Darrell always cooks them to perfection so that they are nice and brown and lovely looking on the outside, but tender and juicy and succulent on the inside. The Apple Cranberry chutney that he makes to accompany the pork chops is so sweet and flavourful, you could just eat it on it's own as a dessert. But it's even better with the pork. Very decadent and lovely. As a veggie side dish, I brought back a version of the Wild Rice and Squash Casserole/Dressing that I had made last year for Thanksgiving. Just made a few minor changes (added mushrooms and diced back bacon, deleted the sourdough croutons.) I forgot how much I loved this dish... it's impossible to go wrong with bacon and cheese I think. And of course what would a great meal be without a great wine to help you digest it. Darrell picked up a California Zinfandel called the Seven Deadly Zins, finally finding what we thought was only a myth, a red wine with a 15% alcohol content. It's the little things in life. Goodbye Earl the Turkey, Hello Tom the Pig
