Who doesn't love peanut butter?!?! (other than people with PB allergies I suppose. Kind of life threatening and not humorous at all.) I, however, love the stuff. Love it in cookies, love it on toast, love it in smoothies, LOVE it with chocolate, love it on a spoon all on its own (yup, I double dip. My house, my rules). I also love it in the form of a spicy sauce. Over the last few years I have made peanut sauces in various forms, varying levels of complexity, and degrees of spiciness. This one is super basic as is the entire recipe. It reminded me of one of my favourite thai take out foods. Why order take-out when you can quickly whip up your own similar version for a lot less money - keep the delivery tip for yourself and spend it on something delicious....am thinking something with chocolate and peanut butter in it for some reason.
I finally got to use the box of A Taste of Thai rice noodles that I've had up in the cupboard for eons (love long expiry dates). That was actually the main impetus for making this recipe, I hate wasting things. I don't know why I never think to use them. Pretty idiot proof to cook up ... although thinking back, the first time I used them they were a little too al dente, sometimes I don't read instructions well. Oops. It's also a great recipe to throw in some leftover veg or chicken or tofu from previous meals. Again, I hate wasting things and if I can use it in something, then I will. I happened to have some shrimp in the freezer that were getting close to Freezer Burn Territory. They are quick to saute up while you're preparing the sauce and veggies plus they add an extra nice nuttiness to the already nutty sauce. I had a generous portion size for dinner (what? I was hungry!) plus plenty of portions leftover to freeze for a later date. I love cooking but I also love NOT cooking if you catch my drift. I wouldn't recommend freezing the shrimp again if you don't want to risk food poisoning, that's just no fun at all really.
Super easy, super quick, super spicy (but only if you want it to be), and super nutty (like a few people I know, just kiddin. Maybe.) And you get to eat peanut butter for dinner. How awesome is that?!

Thai Noodles with Spicy Peanut Sauce

Skill Level: E.A.S.Y. (no chopping required, thank god!)
Clean Up: 2 pots, gotta love it.
Ingredients
1 box of A Taste of Thai Rice Noodles
4 tbsps of sesame oil
2 cups of frozen stir fry vegetables
3 tbsps of minced garlic
1/2 tbsp ground ginger or 1 tbsp of fresh minced ginger
1/4 cup honey
1/4 cup peanut butter
1/4 cup soy sauce
3 tbsps rice vinegar
1/2 tbsp chili-garlic sauce. Increase amount if you're feeling extra spicy ;-)
Directions
Cook noodles according to package. Once cooked, add 2 tbsps sesame oil and toss. Set aside and continue making the sauce and veggies.
Heat the remaining 2 tbsps of sesame oil over medium-high heat in a fry pan. Add the veggies, garlic and ginger. Saute for about 4 minutes or so, until the veggies are cooked but still crunchy. Add the honey, peanut butter, soy sauce, vinegar and chili-garlic sauce. Mix well. Simmer for 2 minutes. Pour sauce over the noodles and toss well.
Garnish with green onions if desired or add some sauteed shrimp for some protein. Would also be great with tofu or leftover chicken.
