This is another recipe that I will add to my regular repertoire: Lime Curry Tofu Stir Fry. I am forever on the search for tasty recipes, dishes that I can throw some tofu into, with a great sauce that I won't get tired of when I eat it for lunch and dinner for several days in a row (yup I do that). It's surprisingly difficult to find them. It seems like there is still some tofu-resistance out there. It's time to face your fears and embrace the tofu. That could be a new bumper sticker. Or not. Anywho, this is a delicious recipe that you can pretty much throw any vegetable in to. Next time I'm thinking mushrooms, water chestnuts, maybe some carrots. It's sweet, it's sour and it's saucy. Kinda like me (?) It is absolutely delicious, and the aroma will cause your co-workers much envy when you heat it up for lunch. Soak up the sauciness with a rice variety of your choice, or some crusty bread. Crusty bread goes with everything- yippee for carbs! Cheers from Bistro 164. Eat more tofu. Lime Curry Tofu Stir Fry
adapted from an All-Recipes recipe
Ingredients
2 tbsps canola oil
1 package extra-firm tofu cut into cubes
1 tbsp fresh minced ginger (I used 2 tbsp minced ginger in a jar)
2 tbsp soy sauce
1 tbsp fish sauce
3 1/2 tbsp red curry paste
2 green onions, sliced
1 tomato, diced
1 red bell and 1 orange pepper, diced
1 zucchini, diced ( I like using yellow zucchini for some reason)
3 tbps fresh lime juice
2 tbsp maple syrup
1 can (14 oz) of coconut milk
1/2 cup fresh chopped basil
Directions
Heat the oil in a skillet or wok over high heat. Add the tofu and saute until golden brown. Remove the tofu and set aside.
Stir in the ginger and curry paste. Add the zucchini, bell peppers, and tomato and cook for 1 minute. Add the lime juice, soy sauce, fish sauce, maple syrup, coconut milk and tofu. Bring to a simmer and cook until the vegetables are tender. Stir in the chopped basil and green onion. Serve over rice, bulgar, couscous or quinoa. Some crusty bread would also be nice to help soak up the sauce.
