Lentil-Walnut Loaf... so in love with oh she glows


Listen up! I have just made the greatest discovery of all time....well in all of cookbook time to be more specific.  Never have I found a cookbook that offers so many tasty and delicious recipes all under the same cover. Never have I made so many of those tasty and delicious recipes and been so excited about it and eager to tell the rest of the world. Never have I been so excited to make even more of those tasty and delicious recipes that I just can't put it away (it may have a permanent spot on my kitchen counter forever.) Never have I gone out and purchased a food processor just so I could make so many of those tasty and delicious recipes (this is a real big deal...I am super cheap!) Never have I had so much fun at Bulk Barn shopping for ingredients for those aforementioned recipes....well ok, that's not quite true, I have a Bulk Barn addiction.

When the world learns of my discovery, praise will be lavished upon me and people will bow down at my feet. So here it is, wait for it...the book is called... the oh she glows cookbook by Angela Liddon. Pardon? What was that?  It's the top Canadian-authored book for 2015 you say? It's been on the Globe and Mails Bestsellers list as the bestselling cookbook in Canada AND has been on the New York Times Bestsellers list? It was Chapters/Indigos Book of the Year in 2014? The author has been featured in countless newspaper articles,  media interviews, has won several awards and accolades for both her cookbook and her blog? So what your saying is is that this is all old hat and I'm late to the game? Oh. Sigh. Well then. Always the bridesmaid and never the bride it seems.  Ah well, I'm still happy about my latest little find. And if you are the one other person on the planet who has not heard of this book or tried out her recipes yet... go get it! What on earth are you waiting for????

Seriously, I'm in LOVE with this cookbook. Yes some of the ingredients won't necessarily be common place staples in your kitchen...yet. That can be easily remedied (Bulk Barn shopping trip!!!!) And you don't have to be a vegetarian, vegan, gluten-free what-have-you to enjoy her recipes. I will say that having a food processor will make your life so much easier (and yes, we were also late to the game on this one as well.) So far we've tested out the veggie burger (yum!), the Orange-Maple Miso dressing (yum!), the hummus (yum!), the Perfected Chickpea Salad Sandwich (yum!), the classic go bar (yum!), the Out-the-Door Chia Doughnuts (yum!), and the Cream of Tomato Soup (which we had last night for the second time- yum!) And there are so many more that I can't wait to try out.  The Lentil-Walnut recipe featured here is absolutely amazing. Yes it does have a long ingredient list which normally turns me off (recipe ADD I call it) but the final product is so delicious that I am willing to overlook it. I'm thinking that next time I will make a double batch and freeze the second loaf for later.  My mouth is watering just thinking about it. Just look at that sweet glaze topping! How can you resist? I don't think you can. And I hear that she has a second cookbook coming out...pardon? It was released about a month ago you say? Just kidding. I knew that. I just placed my order today. Can't wait! Lentil-Walnut Loaf
from the oh she glows cookbook by Angela Liddon


Serves 8
Skill level: Pretty easy but does require a lot of prep (40-45 minutes), cook time is 55-60 minutes
Taste: Absolutely delicious, so well worth the time it takes to make it

For the loaf:
1 cup uncooked green lentils
1 cup shelled walnut halves, finely chopped
3 tbsp ground flaxseed
1 tsp extra-virgin olive oil
3 cloves garlic, minced
1 medium yellow onion, finely chopped
salt and pepper
1 cup finely chopped celery
1 cup grated carrot
1/3 cup grated peeled sweet apple, (optional)
1/3 cup raisins
1/2 cup oat flour
1/2 cup spelt bread crumbs (I just used regular bread crumbs)
1 tsp dried thyme or 2 tsps fresh thyme
1 tsp dried oregano
1/4 tsp red pepper flakes (optional)

For the balsamic-apple glaze:
1/4 cup ketchup
2 tbsps unsweetened applesauce or apple butter
2 tbsps balsamic vinegar
1 tbsp pure maple syrup
Fresh thyme leaves, for garnish (optional)


Directions

1) Cook the lentils (1 cup of lentils to 3 cups of water- simmer uncovered for 20-25 minutes, drain excess water after cooking).  Place the cooked lentils in a food processor and pulse for a few seconds. You want it to become like a lentil paste, leaving some lentils intact. Set aside.

2) Preheat your oven to 325 F. Spread the walnuts out in a single layer on  baking sheet. Toast them in the oven for 9-11 minutes.  Set them aside when done and turn your oven up to 350 F. Get your 9 x 5" loaf pan and line it with parchment paper.

3) Add the olive oil to a large wok and heat over medium heat. Add the garlic and onions and saute for about 5 minutes or so. Season with salt and pepper. Add the celery, carrot, apple and raisins. Saute  for another 5 minutes.

4) Stir in the lentils, flaxseed, walnuts, oat flour, bread crumbs, thyme, oregano, salt, pepper, and red pepper flakes. Stir until well combined.

5) Press the lentil mixture firmly and evenly into the loaf pan. 

6) Make the Balsamic-Apple Glaze: In a small bowl, whisk together the ketchup, applesauce (or apple butter), balsamic vinegar, and maple syrup. Spread the glaze over the loaf with either a spoon or a pastry brush.

7) Bake uncovered for 50-60 minutes, until the edges are lightly browned. Let cool in the pan for 10 minutes. Lift it gently out of the pan (using the parchment paper) , using a knife around the edges to help separate it.  Place on a cooling rack. Cool for about 30 minutes before slicing (it holds together better if fully cooled.) Garnish with fresh thyme leaves before serving.
