Over the past year or so I have discovered the deliciousness that is Miso. Yes it took me awhile but I finally got there and that's what matters in the end isn't it? It's perfect in a veggie stir fry, tasty on salmon, and absolutely amazing in the previously featured Orange Miso Chicken recipe. And now I have another new favourite way to use it. Of course I've heard of Miso soup (who hasn't???): It's a traditional Japanese soup that has been around for centuries. But I had no idea how to make it and no idea how simple and flavourful it is. My intro to Miso Soup began at our local Farm Boy (in LOVE with that place...a good little Canadian grocery store success story from Cornwall Ontario of all places.... I grew up near there so I can bash Cornwall a little...done with much love only a local can have for the place.) A lovely lady at the sushi counter was helping me locate the miso (it's always the last place you look) and she asked if I had ever made Miso Soup. Well, no, no I haven't Nice Lady. She then proceeded to tell me how to make it, what ingredients she likes to add etc. That's how my latest obsession started. Good old Mr. Google helped me the rest of the way. You will find several versions of miso soup on the interweb but I went with an extremely basic recipe. And no, mine is in no way traditional: I use chicken broth instead of dashi. But it's delicious nonetheless. And did I mention super easy? You can make it in about 5-10 minutes tops. It's also a budget friendly meal containing four ingredients. That's all it is. Yes you can add more ingredients if you like but I wanted to keep it simple for now. You can have it for breakfast, lunch, dinner, as an appetizer, or a snack. We have done it all. I usually try to make a big batch up on the weekend as the sous chef likes to have it as a quick breakfast on his way to work. It's salty, light, sweet, savoury, low-cal, quick, cheap, simple, versatile, umami delicious...what else do I need to say to convince you really? Mmmmmmiso....

Ingredients
4 cups of water/chicken broth/vegetable broth
3-4 tbsp white miso paste (for a light and sweet flavour)
2 scallions (green onions)
8 oz Extra Firm Tofu, cubed
Directions
Bring your water/chicken broth/vegetable broth to a boil. Measure out the miso into a bowl. Dice up your tofu and green onion. Once your water/broth has boiled, scoop out a bit and add to your miso. Stir well. Add the mixed miso back into the boiled water/broth and turn down the heat to a simmer. Mix well again and add in your tofu. Let simmer for a 2-3 minutes minutes, just until the tofu is warmed. Add your green onions at the end just before serving. Enjoy the Miso Goodness!
